MY STORY
Coffee as a religion.
I've been living by these words for the past 9 years.
My name is Takumi, I was born and raised in Tokyo, Japan.
Takumi means craftsman-ship in Japanese. It is a name that has influenced the choices I have made in my life, and cultivated my passion for artistry in every endeavour I undertake.
Back in Japan, I was an apprentice pastry chef for a few years, but soon realised it wasn’t for me and decided to move to Australia in 2008.
During my first 2 years in Sydney, I studied product design and worked in a cafe part-time to pay the rent. It was here that I fell in love with coffee. But it didn't stop at falling in love, as I delved deeper into the world of coffee, I became obsessed. I was determined to learn every step from agriculture and farm, to the end product. The bean, the flavours, the smell - it was all important to me. I knew then, that from this moment on this would be my new project, passion and ultimately lead me to my life's career.
I have been roasting and brewing coffee for nearly a decade now.
It has always been my passion to roast and brew coffee in a way that I can express the true flavours of their origin. I then take great pleasure to serve it to my customers and see them smile.
Every once in a while, I come across an extremely delicious coffee that catches my attention and brews such excitement I find myself talking about it for days. But as much as this coffee makes me happy, there is always a bit of frustration that I'm the only one who gets to experience it. I often found myself thinking
“I wish I could share this coffee with everyone.”
This is how "BRUT coffee" was born.
Every month, I will select a truly unique and delicious coffee, roast it to perfection and deliver it to your door so you too can enjoy it.
