BRUT Coffee turns 1!
To celebrate our anniversary, we sourced the most exciting coffee from our friend Carlos and Filipe brothers from Cofinet.
We believe this is the future of specialty coffee.
The variety is a humble Castillo, but it went through the most innovative processing method called Mandarine Natural to add extra flavors and complexity to the cup.
As the name "Fiesta" suggests, it's like a dance party in your mouth.
I have cupped so many coffee over my career, but I never tasted anything like this. The flavor is so powerful and it has an unmistakable note of Mandarine.
I am so thankful to Carlos and Filipe from Cofinet offering me this special lot and honoured to be one of the first roasters to receive it.
Mandarine Natural
This lot was exposed to a dry anaerobic fermentation of 48 hours, during this fermentation period, citric acid and dehydrated mandarine skin were added to the anaerobic environment. Later the coffee was placed on raised beds below 35 degrees celsius until ideal moisture content was achieved.
The farm "Jardines del Eden"
Carlos and Felipe decided to create their own experimental farm in his home town in Quindio 4 years ago.
As Felipe visited thousands of coffee farms in Colombia, he knew all the criteria to make the ideal coffee farm to grow quality coffees.
So they set up the experimental farm from the scratch. They called it "Jardines del Eden" which means "Garden in Eden" in Spanish. in the town of Pijao, Armenia. This farm is located on one of the highest altitude in this region which make it ideal to grow all the high-end varieties.
They have planted over 14 exotic varieties such as Geisha, Sidra, Ethiopian Heirloom. This is one of the first harvest that they made it into the production and we are so excited!

55-60g of coffee: 1L of water

Grind size - Table Salt like / Coffee 12g: Water 200g / Water temp 93C / Inverted method. Steep 2min and quick stir and push
-Clever Dripper
Grind size - Table Salt like / Coffee 12g: Water 200g / Water temp 93C / Steep 2min and drain
-Plunger / French Press
Grind size - Table Salt like (finer than above) / Coffee 60g: Water 1000g / Water temp 93C / Steep 5min, gently push down the crust with a spoon, plunge it gently
-V60/Kalita
Grind size - Coarse ground pepper-like/ Coffee 15g: Water 250g / Water temp 91C / Total brew time 2:00-2:30. Pour water in 4 phases, keep the water level above the coffee bed.

- Too strong and sour ➞ Grind coarser
