Do you remember the Tabi Natural from BRUT Coffee vol. 8

By far the best Tabi variety we have tried and still one of my favourite coffee from last year.  We are so excited to release his Geisha lot this time. 

A massive thank you to our green bean partner Caravela Coffee. We feel privileged to roast his coffee once again and continue to work with you.

Milton comes from a traditional coffee family, and coffee has always been part of his life. He began to focus on sustainability and quality in coffee in 2012, now he closely work with Caravel Coffee to keep improving the quality.

 

X Grade

A massive thank you to our green bean partner Caravela Coffee. Once again, 

This is a part of Caravela coffee program, when partner producer submit their coffee to the dry mill at Caravela Coffee. They undergo an extensive quality control and they are separated into categories based on the quality such as; RTB (Ready To Blend), A, AA, AAA, and ML (Micro Lot).

When the quality is so exceptional, then they fall into Micro Lot X Grade category. 

I had no idea, when I first tried Tabi Natural from Milton Monroy last year. No surprise it was indeed X Grade and this lot made me so happy. By far the best Tabi variety I have ever tasted and still one of my favourite coffee from last year.

This lot is from the same producer Milton Monroy, but Geisha Variety this time.

So I will let you guess how good it is ; )

 

[ 4 ] Brewing

Grind Particle Size Guide
V60/Kalita > Aeropress > Clever Dripper > Plunger / French Press

Coffee to Water Ratio
55-60g of coffee: 1L of water

-Aeropress
Grind size - Table Salt like / Coffee 12g: Water 200g / Water temp 93C / Inverted method. Steep 2min and quick stir and push

-Clever Dripper
Grind size - Table Salt like / Coffee 12g: Water 200g / Water temp 93C / Steep 2min and drain

-Plunger / French Press
Grind size - Table Salt like (finer than above)  / Coffee 60g: Water 1000g / Water temp 93C / Steep 5min, gently push down the crust with a spoon, plunge it gently 

-V60/Kalita
Grind size - Coarse ground pepper-like/ Coffee 15g: Water 250g / Water temp 91C / Total brew time 2:00-2:30. Pour water in 4 phases, keep the water level above the coffee bed.

 

Trouble Shooting

If the coffee tastes:
  • Too weak and dry finish ➞ Grind Finer
  • Too strong and sour ➞ Grind coarser
But keep the coffee to water ratio always the same.
